"Gluten-Free" produces are safe. There are an increasing number of Gluten-free products on the market. Additionally, there are gluten free substitutes for gluten-containing foods. Orange Mint Rice Salad

Ingredients
Three oranges
three cups cooked rice
0.33 cup golden raisins
0.33 cup cut fresh mint leaves
0.5 cup cut walnuts
Salt and pepper to taste

Directions
Peel and segment 2 oranges ; put aside. Squeeze juice from remaining orange ; put aside.

In a large bowl, combine rice, orange segments, raisins, mint and walnuts. Add orange ; toss well. Salt and pepper to sample.

Yield :
six servings

Baked Chicken Ultimate

Ingredients
one frying chicken, skinned and cut into bits
one green pepper, cut into strips
one clove garlic, pushed
0.25 cup scallions, cut
one cup GF chicken stock
one little spoon tarragon
0.5 cup margarine or butter
2 tomatoes, cut into wedges
one teaspoon paprika
one t salt

Directions
Speckle chicken with garlic and paprika and brown on in 0.25 cup of margarine. Remove from pan. Add rest of margarine and saut mushrooms, onions and green pepper. Return chicken to pan. Add chicken stock, tarragon, tomatoes and salt. Broil for one hour or until chicken is tender. Serve over rice.
